Wine and Liqueur

ZinfandelZinfandel – we pack as much Sonoma County Hawley winery or Sunce winery Late-Harvest Zinfandel as we can into a 62% cacao ganache for a satisfyingly-strong wine flavor in our zinfandel truffle.

SirahSirah – The strong fruity flavor of Sunce Winery’s Sirah comes through well in the 70% cacao ganache.

RumRum – We use 15-year old Rum from Guiana in a 75% cacao in the ganache, dipped in orange-infused, very dark chocolate for a different kind of rum truffle.

PortPort – Sonoma County’s Dry Creek Kachina Vineyards has won numerous medals for its wines. It’s sweet, spicy Port makes a wonderfully decadent truffle in our 62% cacao ganache.

the orange liqueur, Grand Marnier, and the orange-steeped cream need the stronger 70% cacao for the chocolate to shine beside the strong orange flavor.

The full flavor of the raspberry liqueur, Chambord, blends perfectly in our 62% cacao ganache.

Drambuie Drambuie – in a 62% cacao ganache, the revered flavor of the Irish liquer Drambuie shines. (The recipe for Drambuie has been kept secret by the same family for over 200 years, but it is believed to be a mix of Scotch Whiskey, honey, and exotic spices, like saffron.)
