Mint – the 75% cacao ganache ensures the mint complements and doesn’t mask the chocolate; the ganache is made from cream steeped overnight in organic peppermint
French Roast – we pair the sweeter 62% cacao chocolate with the dark-roasted flavor of Sunshine Roaster’s organic, Fair Trade French Roast coffee to deliver both strong chocolate and strong coffee flavor.
Espresso Spice – we steep locally-roasted Sunshine Roaster organic, Fair Trade espresso beans in cream and combine that with 70% cacao and sweet spices often added to espresso.
Earl Grey tea – we steep exceptional, organic Earl Grey tea in cream overnight before using the cream to make the 62% cacao ganache to ensure the tea flavor comes through.
Cinnamon – the truffle’s light dusting of cinnamon is the first flavor; then the 70% cacao chocolate coating, before you get to the 70% cacao ganache packed with cinnamon inside, for a full cinnamon-&-chocolate fest.
Black Darjeeling Tea – the strong tea flavor comes from steeping Organic First Flush Darjeeling tea from the Ambootia estates in India in organic cream, before combining the cream with 62% cacao for the ganache
Fig and Cardamom – 62% cacao ganache balances the large amount of dried fig, with just the right amount of cardamom to complement the light flavor of the figs—one of our most popular truffles.
